Keto Pork Buns

Yesterday my daughter and I went to the asian supermarket in Oklahoma City, Super Cao Nguyen. This is the second time I’ve gone there with her since starting my keto diet and it is so hard! I LOVE mochi, can’t have it. I LOVE shrimp chimps, can’t have it. I LOVE taro root, can’t have it. I LOVE durian, can’t have it. My daughter got a pork bun and I almost cried. But then I remembered that I just got all of the stuff to try an egg white bread recipe I got from Indigo Nili and I thought, AH HAH! I can make this!

We did it and it turned out pretty darn good! I slightly altered the original bread recipe. This is the photo of the ingredients for the original recipe. The actual ingredients I used are listed to the right. I used a cupcake pan with paper liners this time, but I am going to order a silicone pan for hamburger buns so I can make them a little bigger next time.

Ingredients

  • 1 1/2 cup egg white powder
  • 1/2 tsp cream of tartar
  • 1/2 tsp salt
  • 1 tsp stevia (instead of allulose)
  • 1 1/2 cup water
  • 1/4 cup butter powder (optional)
  • 3 T acacia fiber (optional)
  • 2 cups pulled pork with sugar-free bbq sauce

Instructions

  1. Preheat oven to 325° F
  2. Whisk egg white powder, cream of tartar, salt, and stevia with water on high for 5 minutes. It should be very stiff.
  3. Slowly sprinkle in butter powder and acacia fiber, if you have it, while mixing on low until just combined.
  4. Fill cups 1 inch deep with bread batter, add a glob of pulled pork in the middle, mound up over the top with more batter.
  5. Bake at 325° F for 20 minutes.
  6. Let cool 5 minutes and eat.

It’s that easy! They’re good cold so I’ll take them to work with a salad for lunch.

The batter doesn’t rise so mound it high. There’s a lot more you can do with this egg white bread recipe. The allulose makes it brown, forming a crust which doesn’t make sense on pork buns so I switched it for stevia. Pork buns are usually very sweet, but if you want less sweetness reduce the stevia. I’m going to try increasing the sweetness to make angel food cake too. I’ll let you know how it goes. Let me know how it goes for you in the comments!
